FRIED NOODLES (CHOW MEIN)
This is a basic recipe for Chow Mein. Additional ingredients such as vegetables (see page 144), chicken or pork (see page 220) or seafood (see page 74) can be added if liked.
275 g/9 oz Chinese egg noodles
3- 4 tbsp vegetable oil 1 small onion, finely shredded 125 g/4 oz!2 cups fresh bean-sprouts
1 spring onion (scallion), finely shredded
2 tbsp light soy sauce a few drops sesame oil
1 Cook the noodles in salted boiling water according to the instructions on the packet (usually no more than 4-5 minutes).
2 Drain and rinse the noodles in cold water; drain well, then toss with a little vegetable oil.
3 Heat the remaining oil in a preheated wok. Stir-fry the onion for about 30-40 seconds, then add the bean-sprouts and noodles, stir and toss for 1 more minute.
4 Add the spring onion (scallion) and soy sauce and blend well. Sprinkle with the sesame oil and serve.
